With a focus on native ingredients and Peruvian delicacies (have you tried out crispy guinea pig yet?), our menu focuses on local and seasonal produce, creating sophisticated and international fusion cuisine. We are blessed to have a long coastline within a few steps of our kitchen, as well as Peru´s infamous products of the earth and ocean at hand. Give your tastes buds the chance to try something extraordinary: ancestral purple corn and exotic camu-camu to nutrient-rich quinoa and coffee from the ¨jungle´s eyebrow¨.

Chef de Cuisine

Franco Hurtado

Specialist in the awakening of Peruvian ancestral ingredients that are part of a new wave of contemporary culinary creations.

Born in Peru, he studied at the D’Galia Culinary Art Institute and later worked in some of two major local restaurants such as Cala and La Gloria. There he learned the tricks of the trade from exemplary local chefs like Oscar Velarde, his mentor.

Now in his job as Chef de Cuisine, Franco continually explores the perfect combination of the most representative elements of Peruvian cuisine, offering diners an innovative taste experience mixed with the famous traditional touch of renowned Peruvian gastronomy.
